We fondly remember the old Diageo special releases with the unpeated Caol Ilas.
The majority of these bottles had a sherried component and so a sherry finish on this stock was considered.
However, this is a deliberately distillate forward expression. Naked and peat free to give you the chance to understand the true character of the unpeated distillate.
Caol Ila is a spirit that we love, you’ve heard us say that many times before, but the chance to appreciate, understand and add unpeated Caol Ila to your palate memory bank drove the decisions here.
A wonderfully high cutting point making for something quite elegant, sweet and delicate. The rarity made these casks fairly expensive but we hope you agree the experience is worth it.
