Guest Flight: Sherry Bombs

This guest flight is all about the magic of ex-sherry cask maturation. Sherry casks can bring deep colour, rich texture and a whole spectrum of flavour: dried fruits, chocolate, orange peel, roasted nuts, polished oak, baking spice and sometimes a lovely drying finish.

The three whiskies in this line-up show different expressions of that style. Arran brings power and sweet fruit from first-fill sherry casks. GlenAllachie brings Speyside richness through Pedro Ximénez and oloroso influence. Fettercairn, bottled by Gordon & MacPhail for Inverurie Whisky Shop, brings the depth and individuality of a single first-fill sherry hogshead.

Take your time with each dram. Nose first, sip slowly, then add a few drops of water if you would like to soften the strength and reveal more fruit, spice or chocolate.


Dram One: Arran Sherry Cask – The Bodega

Arran Distillery, based at Lochranza on the Isle of Arran, has become known for a bright, fruity and well-balanced style of malt. The Bodega takes that Arran character and gives it a full sherry-cask treatment. It is matured in first-fill sherry hogsheads and bottled at a higher strength, giving plenty of richness, weight and intensity in the glass. Nose: Chocolate raisins, mandarins and warm spice, with hints of polished oak, dried fruit and toasted nuts.

Palate: Ripe figs, sweet cherries and dark fruit, with a chewy texture, brown sugar, spice and a little orange peel brightness.

Finish: Long and powerful, with pink pepper, hazelnuts, toasted oak and lingering dark chocolate.

Self-guided thought: This is the bold opening dram. Look for the balance between Arran’s natural fruitiness and the heavier sherry-cask flavours of raisins, figs, nuts and spice.


Dram Two: GlenAllachie 15 Year Old

GlenAllachie has become one of the modern champions of sherry-led Speyside whisky. Since coming under independent ownership, the distillery has built a strong reputation for careful cask selection and full-flavoured maturation. The 15 year old sits at the heart of that style: dark, indulgent and layered, with the distillery highlighting cinnamon, orange zest, vanilla toffee and dark chocolate. (The GlenAllachie Distillery)

This whisky is shaped by sherry cask influence, with retailers noting Pedro Ximénez and oloroso casks in the make-up. That combination is important: PX often brings sticky sweetness, raisins and syrupy dark fruit, while oloroso tends to add nuts, spice, dryness and depth. (Master Of Malt)

Nose: Dark cherries, golden syrup, figs and hazelnuts, with orange zest, toffee and chocolate.

Palate: Rich and rounded, with heather honey, cocoa, ginger, raisins, cinnamon and a touch of polished oak.

Finish: Long, warming and sherried, with dark chocolate, orange peel, baking spice and gentle nuttiness.

Self-guided thought: This dram is about richness and balance. Compare it to the Arran: the Arran is punchier and more direct, while the GlenAllachie feels darker, smoother and more layered.


Dram Three: Fettercairn 17 Year Old Gordon & MacPhail

Inverurie Whisky Shop Exclusive

Fettercairn is a Highland distillery with a distinctive house style, often known for tropical fruit, soft nuttiness and a waxy, rounded texture. This bottling was released by Gordon & MacPhail exclusively for Inverurie Whisky Shop to celebrate the shop’s 10th year. It is a 17 year old single cask whisky, distilled in 2007 and bottled on 6 May 2025 from first-fill sherry hogshead #18605404. Only 291 bottles were released, at cask strength, natural colour and non-chill filtered. (Inverurie Whisky Shop)

This is the most personal dram in the flight: a sherry-matured Highland single cask selected to mark a milestone for the shop. The official notes highlight sweet red apple, milk chocolate and hazelnut on the nose, followed by creamy Seville orange, cocoa and stewed plum on the palate. (Inverurie Whisky Shop)

Nose: Sweet red apple, milk chocolate and hazelnuts, with polished wood, soft spice and a gentle fruitcake richness.

Palate: Creamy and full, with Seville orange, cocoa, stewed plum and roasted nuts, balanced by cask-strength warmth.

Finish: Long and rich, with liquorice, plum, orange peel and drying sherry oak.

Self-guided thought: This is the special occasion dram. Look for how the sherry cask deepens the Fettercairn fruit without hiding it: red apple, orange and plum sit alongside chocolate, nuts and oak.


Flight Reflection

This flight shows that “sherry cask” does not mean one single flavour. Each dram carries a different version of the style.

The Arran Bodega is bold, youthful and powerful, full of figs, cherries, raisins and spice. The GlenAllachie 15 is darker and more luxurious, with chocolate, orange, nuts and syrupy fruit. The Fettercairn 17 Gordon & MacPhail is the most individual of the three: a single cask Highland whisky with red apple, milk chocolate, Seville orange and stewed plum.

As a final comparison, return to the Arran after tasting the Fettercairn. You may find the Arran feels spicier and more energetic, the GlenAllachie richer and rounder, and the Fettercairn more elegant, personal and celebratory.
