Holyrood is a modern distillery in the heart of historic Edinburgh. Inspired by their surroundings and never afraid to experiment, they are dedicated to shaping the spirit of tomorrow. Each New Make draws upon a different element of the brewing process, from yeast selections to specialty malt ratios, culminating in Made by Edinburgh New Make which is at the heart of the inaugural public cask program.
This speciality malt is lightly toasted and is often used in the brewing of Bitters, adding a subtle sweet character.
Tasting Notes:
Nose: A distinct presence of cereal, malty notes from the Crystal malt with subtle spearmint.
Palate: Bursting with sweet malty notes of digestive biscuits and tropical fruits.
Finish: Long lasting and distinctively creamy.
