For hundreds of years drovers moved cattle, often on foot, from the farthest reaches of the Scottish Highlands to the Lowlands and beyond.
Requiring an adventurous and turbulent spirit, extensive intimate knowledge of the country, and the endurance and ability to face great hardships, drovers marched their cattle southward between seed and harvest with little by way of comfort beyond a ram’s horn filled with whisky.
Cask Type: 37% First Fill Sauternes Barrique, 30% First Fill Madeira Hogshead, 21% High Strength First Fill Bourbon Barrel and 12% First Fill Oloroso Hogshead
Tasting Notes:
Nose: stewed pears, boiled sweets, fresh walnut, crumble
Palate: cocoa nibs, orange zest, apple, pepper
Finish: long and nutty with dark chocolate and bitter almond turning to green apple
