Well it’s clearly not Scapa or we’d tell you. Naming rights are a funny old thing but you now what this is even without having to revert to what3word coordinates!
Anyway, the important bit, the whisky. This is a vatting of two refill hogsheads, sister casks with low fill levels. Low fill levels aren’t great for yield, but they do make magnificently oxidised whisky.
We know we’re preaching to the converted here, but refill wood really gave this spirit the space and time it needed to get to this point. We think good refill wood is one of the things that really separates Scotch whisky from the world whiskies, allowing for longer maturation times without the spirit being dominated by wood.
Faint peat comes across here as distant smoke, not dominating but seasoning the spirit, adding to the salinity and depth, but with that sweet fruitiness that only comes from age.
