The first release from Ballykilcavan was distilled from barley grown by David Walsh-Kempis in the Irish barley heartlands to the west of The Barrow in Co. Laois. Using 45% first fill American oak, 28% French oak and 27% previously used to age vin doux natural (fortified wines)
The Official Tasting Notes include:
Berries with fresh foliage, redcurrants and grapes and a vibrant, freshly cut grass aroma.
Cooked bananas with brown sugar and plenty of heat greet the palate with mulled wine and cinnamon.
A dry, oily lasting finish.
