These American Oak (Quercus Alba) Oloroso sherry casks are crafted in Spain over six years. The oak is shipped to Spain from the USA, and goes through the same painstaking preparation as our European Oak ( Quercus Robur)
Nothing is left to chance, from the air drying of the staves in the Spanish sun, to the manufacturing and toasting of the cask by experienced coopers - and finally the Oloroso sherry seasoning of the new cask in the bodegas of Jerez.

Nose: Shortbread dipped in vanilla cream, then oak, citrus and peppermint.
Palate: Rich, soft oak coats the mouth - giving way to plums and chocolate limes.
